Back at it

Well we're back to cheese making and milking, another years lambing almost wrapped up and lots of cheese ageing away.
Now we just have to sell it!

Time flies

I haven't posted in quiet a while, hopefully I'll get on top of this blog thing one day :) I will certainly be posting more in the coming weeks-mainly as some serious thinking and decision making is happening on my part and keeping everyone up to date is important.
We also want to congratulate Burke Brandon of Redhill on his move forward with dairy sheep-well done!

Busy much?

Sure are! We've got a licence-after several months of final preparations, tanks, electric, sinks and council inspections the dairy inspector came and issued us our licence number, it's on a piece of card and we've been admiring it, it's taken a long time to get here! We are also having a new logo designed, I can't wait to post the final-it's stunning. There is of course still heaps to do, we still need to finalise containers and labels, get enough cheese moulds and other cheese stuff, we're currently milking 12 sheep, so there isn't heaps of milk yet, but hopefully more will come in soon so we have more milk. I've been making yoghurt, camembert and drained yoghurt curd, I'll also soon be making soft curd and starting on some of our more aged cheeses so they can be happily growing older gracefully for sale later in the season...........there are also some plans to try out a cardoon rennet cheese in the future, which will be interesting :)

Cheese and yoghurt by mid-June!

Hi everyone,
We're finally finished with the council, our last inspection has been done and we're all approved. The NSW food authority will be out in the next 2 weeks and we will be officially able to make cheese! So get ready, a list of markets will be posted soon, and also listed on our new website. Now if only the ewes will cooperate.......

Nearly there.....

We're nearly finished-I'll post pics of the finished cheese room shortly-we have applied for our license and we should be selling some cheese from mid-June! Watch this space!

It's all happening!

Well we're nearly there, I really need to get out and take some pics of the cheese room-which looks fabulous! The vat is out of it's pallet and will shortly be washed and connected to the water-when the ewes start to lamb in June we will be able to make cheese! The food Authority have to be out and inspect, but we're certainly getting close now :)

Getting there

Thistledown creamery is getting closer to being a reality, the equipment is slowly coming together and we've been inspected by council and sydney catchment authority. We're hoping to be registered by June and then we'll start making some cheese to sell!!
