It's all happening!
Well we're nearly there, I really need to get out and take some pics of the cheese room-which looks fabulous! The vat is out of it's pallet and will shortly be washed and connected to the water-when the ewes start to lamb in June we will be able to make cheese! The food Authority have to be out and inspect, but we're certainly getting close now :)

ahha! A new bog you sneaky thing I didn't realise you had a new name for the cheese side. Very English. Does this mean you are going to use rennet from thistles? Only joking but I did see somewhere in Europe this was done. Well know I know where to keep up to date. Good on you.
ReplyDeleteDon't laugh ;), I have considered using thistle rennet...........seems like a bit of hit and miss though!
