Busy much?

Sure are! We've got a licence-after several months of final preparations, tanks, electric, sinks and council inspections the dairy inspector came and issued us our licence number, it's on a piece of card and we've been admiring it, it's taken a long time to get here! We are also having a new logo designed, I can't wait to post the final-it's stunning. There is of course still heaps to do, we still need to finalise containers and labels, get enough cheese moulds and other cheese stuff, we're currently milking 12 sheep, so there isn't heaps of milk yet, but hopefully more will come in soon so we have more milk. I've been making yoghurt, camembert and drained yoghurt curd, I'll also soon be making soft curd and starting on some of our more aged cheeses so they can be happily growing older gracefully for sale later in the season...........there are also some plans to try out a cardoon rennet cheese in the future, which will be interesting :)

  1. Well done. It must be madness there...I'll try not to bother you this month. Next month I won't have time to when I'll be in the same boat. Where would you get cardoon rennet from?

    Must say with only 11 ewes lambed it's more of a trail of patience than anything! Feel free to bother me all you like LOL We're growing the cardoon plants, then we'll dry some flowers and see how it goes.....

  3. You can only but try - not much to loose. Gee that stud ram? on your logo looks like a bit of a spunk. He obviously has a very happy life at Thistledown :P He looks a bit like some of my original Coopworths.
